Pasta with Sage-Scented Squash November 9, 2011

I freaking love fall

Squash, apple cider (currently drinking some hot cider from Fuhrman’s – thanks Mom and Dad!), leaves rustling, sage …

I had some cubed squash left over from this soup & it was the perfect inspiration for dinner!

Heat 1 tablespoon olive oil and 1 tablespoon unsalted butter over medium-high heat

Add 2 cups cubed butternut squash, 2 thinly sliced shallots & 12 fresh sage leaves

Saute over medium-high heat until squash is lightly browned

I added 1 can garbanzo beans, drained & 1/2 of an eggplant I had leftover

(both would be totally optional with this meal and were only add for protein and to use up a veggie that needed to go!)

Saute 5 minutes

Add 3/4 cup vegetable stock

Simmer over medium-low heat until vegetables are tender

Season with salt & pepper, if desired

Cook your choice of pasta according to package directions

Empty a 6-oz bag of spinach into your colander and place in sink

When pasta is al dente, empty over the spinach

(easy way to steam the spinach!!)

Add pasta & spinach to vegetables
