Artichoke Salad April 20, 2011

I’m loving loving loving artichokes right now

And salads – weird for me

This salad is easy to whip up – especially if you use canned artichokes

First, clean your artichoke (if you aren’t using canned)


(37 weeks pregnant = lazy)

Add artichoke to boiling water seasoned with 2 halves lemon (squeezed) and salt

Simmer until fork tender

Shock artichoke in ice water and set aside until ready to use


Sliced red onion

Feta cheese

Diced tomatoes

kalamata olives

chopped, fresh oregano and parsley

and quartered artichokes

Toss in a lemon vinaigrette

(1 part lemon, 1 1/2 parts olive oil)
