10 cups chicken stock
5 carrots, peeled and sliced
1 pound ground turkey
1 cup breadcrumbs
1/2 cup fresh flat-leaf parsley, finely chopped
1/4 teaspoon freshly ground nutmeg
1 teaspoon Hungarian paprika
Salt and Pepper
2 cups thin egg noodles
1/2 cup roasted red peppers, quartered and thinly sliced
6 green onions, thinly sliced
(about) 3 tablespoons fresh dill, finely chopped
Combine sliced carrots and stock in a large pot
Bring to a boil and reduce to simmer
While the stock is coming up to a boil, prepare the dumplings by combining:
ground turkey, egg, breadcrumbs, parsley, nutmeg, paprika, salt, and pepper.
Shape into 1-inch meatballs and drop into simmering stock.
Let the dumplings cook for 5 minutes
Add noodles, green onions and roasted red peppers
Let cook another 5 minutes until noodles are tender
Add fresh dill and serve!
