On the Menu:

Enchiladas Verde

Spanish Rice

Refried Beans (from the can!)

Enchiladas Verde

For the filling:

Pulled chicken (I had roasted a whole chicken for dinner the night before, so I just used the leftovers!)

1 onion & 1 green pepper, diced (I quickly softened them in a saute pan)

1 can diced green chiles

1 cup of enchiladas verde sauce (from the can!)


Fill tortilla shells, roll, and place in a glass pan which has been covered with a thin layer of sauce

Top with sauce, shredded cheese and bake at 375˚ for 30 minutes

Serve with:

Refried Beans


Spanish Rice

1 clove garlic
½ cup tomato sauce
½ cup diced onion
½ cup diced green pepper
1 tsp. salt
2 cups broth or water
4 tbsp. olive oil
1 cup rice

To make, in a small sauce pan, add the oil and the rice and place over medium heat.  Continue to stir the rice, if not it will burn, and cook the rice in the oil until it is lightly browned.  Once the rice is brown, add the onions and peppers and cook for 2 to 3 minutes.  Add chopped garlic and continue to cook for 30 seconds.  Then add salt, tomato sauce and broth.  Bring this to a boil then cover with a lid and bring the temperature down to low and cook for 20 minutes.  When 20 minutes are up, turn of the heat and do not uncover the rice but let it sit covered for 10 more minutes.  Once ten minutes have passed, uncover and fluff with a fork.
